Small molecule pectin is mainly obtained through extraction processes such as acid extraction, ion exchange, membrane separation, microwave, enzymatic hydrolysis and microbial methods. Currently, the most commonly used extraction method is acid extraction, which uses the solubility of pectin in acidic solutions and its precipitation characteristics in ethanol or multivalent metal salts.
